&lt;p&gt;Below is a little bit about each wine, all of which are available for puchase in our &lt;a title=&quot;Online Wine Shop&quot; href=&quot;/shop/&quot;&gt;online store&lt;/a&gt;.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&amp;lsquo;2007&amp;rsquo; The Cut Shiraz: &lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&amp;nbsp;The Cut&amp;rsquo; Shiraz is made from selected parcels of fruit, chosen at the time of harvest. Some vines grow in an East/West direction, while others are North/South, allowing us to select the &amp;lsquo;The Cut&amp;rsquo; parcels depending on the seasonal growth patterns and difference in ripeness. A full bodied and impressive wine, we are particularly proud of our latest release of &amp;lsquo;The Cut&amp;rsquo;.&amp;nbsp; Since its release in July, it has already been awarded 4 &amp;frac12; stars at the Winestate Magazine New Release Tasting Awards, and is now a contender for the Best Shiraz in Australia and New Zealand.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;2010 Viognier: &lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Our Viognier vines were originally planted to blend with our Shiraz grapes, however, in recent years we have had sufficient surplus to make a straight Viognier wine. Although not traditionally a white wine area, the Bendigo Terroir seems to agree with the production of this wine. With an aroma of apricots and orange blossom and a rich, round and textured palate, our 2010 release is looking like it will be a great success.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;2008 Shiraz Viognier:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Another outstanding wine, our 2008 Shiraz Viognier has been co-fermented, which means the Viognier grapes are picked at the same time as the Shiraz. This ensures that the apricot character of the Viognier is almost non-existent adding to the complexity of the wine. Our Shiraz Viognier represents the classical Bendigo terroir in an excellent year.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;2007 Cabernet Sauvignon:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Our Cabernet Sauvignon has been performing extremely well. The climate of the Bendigo area allows us to fully ripen the fruit and avoid green stalkiness. The warm days and cool nights give rich colour to the wines, without the plumbiness of overripe fruit. &lt;p&gt;2008 &apos;The Cut Shiraz&apos;, 94 Rating.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&apos;Full red-purple; a full-bodied, rich shiraz with multiple layers of ripe fruit, oak and savoury tannins; black fruits, bitter chocolate, licorice, spice and cedary oak all contribute to the wine and its longevity.&apos;&lt;/em&gt;&amp;nbsp;James Halliday - Published on 17 Mar 2011&lt;/p&gt;
&lt;p&gt;2010 Viognier, 92 Rating.&amp;nbsp;&lt;/p&gt;
